Ingredients for 4 servings:
3 tablespoons butter or margarine
2 cups onions, sliced
2 (14 1/2 ounce) cans beef broth
3 beef bouillon cubes
4 slices melba toast
4 tablespoons grated parmesan cheese

Put the butter in a 2-quart microwave-safe casserole. Microwave on High (100 percent) for 30 seconds until the butter is melted.

Add the onions to the casserole and stir to coat them with the melted butter. Cover and microwave on High (100 percent) for 5 to 6 minutes until the onions are soft. Add the beef broth and the bouillon cubes.

Cover again and microwave on High (100 percent) for 5 to 7 minutes, stirring after 2 1/2 to 3 minutes, until the soup is heated through.

Pour the soup into 4 microwave-safe soup bowls. Lay 1 slice of melba toast on top of each serving and sprinkle with 1 tablespoon of Parmesan. Microwave on High (100 percent) for 2 1/2 to 3 minutes, until the cheese melts.
